Tempt my Tummy Tuesday.

Camp Kabobs

Camp Kabobs are easy and mess free. The kids like eating them too, because they're fun to eat. Bake potatoes directly in the fire, add some bread and you've got a meal.
Prep Time: 30 minutes
Cook Time: 1 hour
Total Time: 1 hour, 30 minutes
Ingredients:
  • 2 lb. boneless skinless chicken breasts
  • 2 lb. sirlion tips (can use beef stew cut meat)
  • 2 bell peppers
  • 2 large onions
  • lemon
Preparation:
Simply cut chicken and beef up into pieces, slice up onion and bell peppers, place on kabob sticks and squeeze lemon over kabobs right before grilling.
Servings: 8

Campfire Corn on the Cob




 It is so easy and the corn will be really tender. It is a cheap and easy side dish for a campfire meal.
Prep Time: 5 minutes
Cook Time: 10 minutes
Total Time: 15 minutes
Ingredients:
1 bag frozen corn on the cob
Toni's Cajun Spices
butter
salt and pepper, to taste
Preparation:
Place individual ears of corn, still frozen, on a piece of heavy aluminum foil. Top with Toni's, salt and pepper, and a pat of butter. Wrap each ear of corn with foil and twist the ends. I then place the individual wraps right on an open fire, but I have placed them on the grill too. Takes about 5 to 10 minutes. Enjoy!
Servings: as needed

Oreo cookies
Cool Whip
Gummie Worms
Gummie Critters
Preparation:
Crush Oreos and mix with Cool Whip and Gummie Critters. Serve chilled.
Servings: varies



Meet me Monday!!

1. What is your favorite thing about summertime?
The late night light, camping, roasting marshmellows, Watching Big Brother, swimming, laying in my back yard and reading a good book, BBQ's, pedi's, birthday cake, starting Christmas shopping and crafting, family time, my yard and garden, trips to the beach, collecting sea glass. Now if us in Washington could just get some darn Sun I would be so happy!





2. What is your ideal retirement location (if money didn’t matter)?
I would have to say that I would want a cabin at the Ocean near Cannon Beach. I would also have a house September thru May down in AZ/NV/ Or in Palm Springs or San Diego. But for sure somewhere near my parents so I can take care of them. 


3. Do you live in the same town you grew up in?
Not in the same town but in the same county. I have always wanted to have a new life somewhere else but I am such a family person that I can't ever see myself leave until my family is smaller.


4. What nervous habit did you have as a child that you kicked to the curb before becoming an adult?
Biting my fingernails but I still have to bite them all off if I break one. Yes bite them off. I dont’ know why. Probably some deep seated stress?
5. What is the one era would you want to be a part of?
You mean I have to pick one? I don’t know, I would have to say I would love to have lived in the 1930's and I would love to have lived in the Tudor years. I think that I would have been a Queen!

Grad's


It seems like just yesterday I was walking down to graduate. 
All my thoughts and dreams were right there. 
I thought I knew it all and I thought that I was an adult.
I was 18 & I wanted this part of my life to be done...
well that was then and this is now.
What I would give to go back and do it all over.
I would so be a better daughter, 
I wouldn't be into boys...I would study!
So with those thoughts I thought I would share my pics of

This weekend two of my girls ( One a Niece I adpoted :) The other is my Cousin Maddy.) that have been my world for the their entire lives. 
both different but none the less loved then the other. 

Kaley is the reason I have always wanted kids & why I have always wanted a little girl. Her parents are two of the best people I have known. They were like the sister and brother I have always wanted and needed growing up.
Suzie, was my true first best friend. She shared her children with me and let me be a part of their lives. 
Kaley and I have always been close and the love I have in my heart for her is beyond any bond that I have shared with anyone. 
Yesterday it hit me how time has just flown by. 
But now I get to look forward to all the great things to come. I get to be friends with Kaley as an adult not just as an auntie. This makes me feel good. 
That I will be important to her like her Mom was and still is to me.

I found out that my favorite Aunt was having her when 
I was in 8th grade at the Kingston Jr High 
in my 3rd period class. 
 My Parents came and got me and 
away we went to the hospital,
 Holding this little girl I just new how much I would always lover her. 
She was so much younger then the rest of us cousins so we were into our own things but I always tried to go above and beyond to try to protect her. 
We became really close a few years ago.
We were at the ocean and I looked over at her, 
it hit me that she wasn't a little girl anymore.
We laughed and told stories and I was a part of her life.
I feel like now as she gets older we get closer.
 I just love the women she has become. 

When Kaley & Maddy were about 6 we all went camping
at Kalaoch together and they became friends played and enjoyed their summer camping trips. Not seeing each other for a few years they went to Jr High together, then they became friends.
Friday Night when they did their graduation walk
the two best friends "My girls" walked together. 
This Auntie couldn't be more proud.

Thankful Thursday!

There are so many things that I am thankful for this week.
BUT I will be talking about                
Date nights.
We ALL know life can get pretty crazy. We fall in love, get married and think we are going to live happily ever after.
Then comes the careers, meetings, yard work, laundry, grocery shopping, cooking, cleaning the house, bills, friends, illness, stress, ( kids for some of you)etc. 
We forget to slow down and count our blessings and focus on the person we decided to spend the rest of our lives with. We forget to continue dating our spouses.
Making our significant other a top priority.

I love and enjoy our date nights....
We do a lot of date nights in at the house!
We are going to do a cuddle and Netflex movie night tonight. 
We are going to join the 
Project 52 date nights.... 
we will keep you up on all of our  dates and ideas....

Campfire Hobo Stew



This is an easy, economical and healthy recipe. We usually set up the ingredients buffet style and then form an assembly line.
Prep Time: 5 minutes
Cook Time: 15 minutes
Total Time: 20 minutes
Ingredients:
  • ground beef or stew meat cut into small pieces
  • vegetables of your choosing - corn, green beans, carrots, onions, bell peppers
  • garlic
  • butter
  • salt and pepper, to taste
Preparation:
Tear off a piece of aluminum foil large enough to fold into a pocket to put your ingredients into.

Spray the foil with cooking spray. Add meat first, then vegetables. Top with seasonings and then butter. Close foil on all sides, leaving some room for steam to build. Be sure to mark your packet so it doesn't get mixed up with anyone else's.

Put packet into the coals. Cooking time depends on how hot your fire is. I recommend checking in about 10 minutes.


Chicken Dinner in a bag

You can add any vegetables that your family likes. We've used fresh green beans and mushrooms with great results, but broccoli didn't go over as well.
Prep Time: 15 minutes
Cook Time: 30 minutes
Total Time: 45 minutes
Ingredients:
  • chicken breasts, boneless, skinless
  • red potatoes
  • corn on the cob
  • 1 medium onion
  • 1 package dry onion soup mix
  • 1 tablespoon flour
  • 4 tablespoons butter or margarine
  • large size Reynolds Hot Bags
Preparation:
Dice onion and cut potatoes into bite size pieces. Shuck corn and cut into halves, if desired. Put everything into the Reynolds Hot Bag and fold the opened end twice to seal. Put it on top of the grill or on the tri-pod grill surface about five inches above the fire. Turn the bag carefully after about 15 minutes and cook another 15 minutes on the second side. Open the bag carefully so the steam doesn't burn you! Enjoy your meal and the easy clean up!Servings: 5 - 6


Egg's in an orange

With this simple recipe, you have your serving of eggs and fruit. It gives an orange taste to the egg.
Prep Time: 2 minutes
Cook Time: 10 minutes
Total Time: 12 minutes
Ingredients:
  • 1 egg
  • 1 orange
Preparation:
Cut an orange in half. Eat the inside of the orange with a spoon, leaving the peal in two half pieces (bowls). Break an egg in one half of the peal and place other half over top. Cover with aluminum foil and leave it in the fire for about 5 to 10 minutes.

Something happened to me this morning.........................


So, today
I decided to freshen up the patio
I hosed off both of our porch in the front
the patio in the back
While I was unrolling the hose
I smelled it....
Pacific Northwest summer...

I smiled and all the memories
of school being out came flooding back
I enjoyed the smell and feel of summer again this morning
and cant wait to everyday from here on out
Well maybe not everyday but more often then not.
I am a true Washington girl when I put a tank top on at 65 degrees!
 Our pride and Joy. 
The first time we have done a garden.
& I feel so proud 
of what we have made grow.
My flowers make me so happy!
I just love this time a year!
 I haven't been this in love with our home.....
except for our house in South Kingston.
I am full of joy. 
  I love warm summer mornings...
